Hilary's Celebrity Chef Tips

i-Village recently ran a story highlighting celebrity chefs and their stay-slim secrets. We were so excited to see our own Suzy contributor Hilary Karmilowicz showcased as one of the chefs! Here are some of Hilary's top tips:
Don't Fall Short on Fiber
From: New York chef Hilary Karmilowicz (veteran of such kitchens as The 21 Club)
“I had four children in five years, and in the process gained and lost about 200 pounds,” recalls Karmilowicz. “After the birth of my last child, I finally began taking inventory of the food that I was eating and I discovered that my meals were lacking fiber, a major component in maintaining a healthy diet.” Karmilowicz’s calorie-cutting secret: “Today, I’m more mindful about working fiber in my diet. For instance, I’ll cook peas for dinner instead of corn or I will add broccoli and asparagus to my favorite dishes. Every day, I try to reach the recommended daily fiber intake.”
Experts say fiber, which slows the rate at which the body absorbs sugars (which, in turn slows digestion and keeps your blood sugar even, so you feel full for longer) is a good starting point for those on the slim down track. In fact, according to the USDA Dietary guidelines, most Americans are currently falling short. If you’re under 50, aim for 25 grams; 21, if you’re older. Solid sources of fiber include fruits and veggies, nuts and whole grain products.
