Sconset Muffins
Suzy still has recipes from one her favorite spots dating back to the 80's.  1987 to be exact!  

Summer mornings in Sconset were never complete without the sea air and a fresh baked muffin. (and coffee!)  If you're in the mood for the taste of Nantucket, try this recipe direct from the (Old) Sconset Cafe'. An oldie but a goodie.

Cranberry Muffins

The Ingredients:
2 eggs
2/3 cup vegetable oil
2 cups buttermilk
3 1/2 cups flour
1 1/2 cups sugar
1 tsp. salt
4 tsp. baking powder
1 tsp. baking soda
Grated rind of 4 oranges
2 1/2 cups frozen cranberries, halved
1/2 cup sugar  (reserve this for sprinkling on top of muffins)

1. Combine the eggs, oil and buttermilk in a bowl and whisk together.
2. Sift the flour, sugar, baking powder, soda and salt into a large bowl.
3. Add the liquid ingredients all at once and stir quickly to just mix.  Add the orange rind and cranberries. DO NOT OVERMIX OR THE MUFFINS WILL BE TOUGH AND HEAVY!
4. Line the muffin trays with paper cups and fill almost to the rim with batter.
5. Sprinkle a teaspoon of sugar on the top of each muffin.
6. Bake in a preheated 350 degree oven for 25-30 minutes or until done.
7. Cool on a wire rack before removing the muffins from the tins.
