It's Grillin' Season

Grilled Zucchini and Summer Squash with Lemon and Rosemary
Serves 4

This simple and healthy side dish is perfect alongside grilled chicken, fish or steak.  Everything can be cooked on the grill at the same time, making clean-up a breeze as well!  Submitted by Tracy Holleran of The Secret Ingredient.

2-3 medium zucchini
2-3 medium summer squash
3 T olive oil
2 T freshly squeezed lemon juice
2 t fresh rosemary, finely chopped

salt and pepper to taste
Preheat grill to medium-high heat.
Trim the ends of the zucchini/summer squash, and cut each in half lengthwise (so you'll have 2 long halves).
In a small bowl, whisk together the lemon juice, olive oil, rosemary, salt and pepper.
Brush mixture over both sides of the veggies, and place on grill, cut side down.
Grill for approximately 3-5 minutes, or until grill marks appear and veggies begin to soften.
Flip each piece and cook an additional 3-5 minutes until tender (but not falling apart).
Remove from grill, cut into 1 inch pieces and place in a serving bowl.
Note:  Grill times may vary due to wide variations in grills.

Pork Tenderloin Marinate
1/2 cup oil
1 T. lemon juice
1 clove garlic
1/4 cup soy sauce
1 tsp. Chinese Five spice

Mix and marinate overnight.  Grill
