We received some great summer recipes this week from our galpals! We're sharing three this week.

Grill Marinade

1 cup olive oil
1/2 cup fresh squeezed lemon juice
1/4 cup red wine vinegar
1 TBspn fresh chopped parsley
1/2Cup fresh chopped basil
1/4Cup fresh chopped rosemary
8 garlic cloves minced
1 Tbspn salt
2 Tspn pepper

Mix all together and pour over meat. Marinade up to 24 hours. Meat will look cooked due to the acidic nature of the ingredients. Do not undercook! 3 to 5 minutes/side. Can add a touch of honey or brown sugar to sweeten

Potato Salad

2 lbs red bliss potatoes
c fresh lemon juice
3 garlic cloves minced
C chopped basil
1 Tbspn Dijon mustard
1 tspn salt
tspn pepper
2/3 C olive oil
1 small red onion chopped
10 strips of bacon chopped
10 oz of spinach or petite spinach
*do not add these items. Reserve for last minute preparation

Preheat oven to 475.
Don't peel potatoes, just cut into small pieces line cookie sheet w/ foil and spray w/ Pam or equivalent and then spray potatoes once on the sheet. Do not season at all. Bake 20 to 25 minutes (mix around, way through)

Wisk all but the oil and then add the oil slowly while stirring afterwards. Put potatoes in a large bowl and add of the dressing mixture, refrigerate for up to 24 hours before.

Cook bacon and chop onion and put aside w/ other dressing until immediately before serving
Place spinach on platter and spread the potatoes over it.
Then pour the remaining mixture over the potatoes and inevitably onto the spinach.
Then sprinkle the onion and bacon over the top and serve.

Oriental Crunch Salad

1 pound bag of shredded cabbage
1 bunch of green onions (chopped with tops)
1 bag of Ramen Noodles (chicken / mushroom / oriental flavor)
3 tbs. sesame seeds (optional on toasting / if toasted, 375 degrees)
1 1/2 cups of slivered almonds (toasted in 2 tbs. of butter)

3 tbs. vinegar
Salt and Pepper to taste
3 tbs of sugar
1/2 cup oil
Flavor pack from Noodles

Toss shredded cabbage and green onions together...
Add Dressing, noodles (keep them dry, do not cook), seeds and almonds (you can also add more vegetables or chicken to jazz it up a notch, if you like, optional) just before serving...

MIX All Together Very Well...Put dressing on right before serving...

Should take about 20 minutes...Great for BBQ's....
