Recipe of the Week: The Secret Ingredient, Farmers Market Stir Fry
Farmers markets abound in summertime, so take advantage of the bounty!  This stir fry uses all sorts of colorful, seasonal veggies, but feel free to improvise with your favorite combinations.

Farmers Market Stir Fry

Serves 4
3 tablespoons canola oil (or vegetable oil)
1 bunch carrots (about 5 medium), sliced
1 medium bunch broccoli, crowns only
2 bell peppers (red, yellow or orange), sliced
8 oz sugar snap peas
1 clove garlic, minced
1 teaspoon fresh ginger, grated

1 scallion or 5 chives, thinly sliced
3 tablespoons soy sauce
1 teaspoon chili oil (or substitute toasted sesame oil for a different flavor profile)

In a measuring cup, add minced garlic, ginger, scallion/chives, soy sauce and chili oil. Stir to combine and set aside.
Heat 3 tablespoons of canola oil in a large shallow pot until hot but not smoking. Add carrots, broccoli, peppers and snap peas and stir frequently while cooking. Allow to cook for approximately five to seven minutes, or until veggies are crisp-tender.
Add the stir fry sauce and cook for about one additional minute, while tossing everything together.
Serve hot....alone or with rice.
