Recipe of the Week: Healthy LunchBox Chocolate Chocolate Chip Cookies:

Healthy LunchBox Chocolate Chocolate Chip Cookies:

3 1/2 cups White Whole wheat flour (or white flour)
3/4 cups rolled oats, ground in a food processor
3/4 tsp baking soda
1/2 cup unsweetened cocoa powder
1 cup sugar
1/8 tsp salt
1 cup skim milk or whole milk
3/4 cup applesauce
1/2 cup brown rice syrup (can get at Whole foods or health food stores)
1 TBS vanilla extract
1 3/4 cup chocolate chips

Preheat oven to 350 degrees and line a cookie sheet with parchment paper

Mix all wet ingredients in a bowl except for the chips and all dry ingredients in a separate bowl.

Mix both wet and dry ingredients together until fully combined and then stir in the chocolate chips. Mix with hands because it will be a bit dry.

Roll dough into one inch balls and then flatten out with a fork and place on the baking sheet. Leave an inch between each cookie.

Bake for 15-20 minutes or until the bottom is a bit golden. They freeze nicely.
