A Mexican Twist

Our gal pal Steph says these are easy and delish! (Her kids think so too!)

Ginny's Turkey Enchiladas
1 lb ground turkey
2 cups salsa
1 16 oz frozen spinach, chopped/thawed
1 8 oz pkg cream cheese, cut into cubes
12 (6") flour tortillas
1 14.5 oz can whole chopped tomatoes, undrained
1 teaspoon cumin
3/4 cup shredded cheese
1/4 cup and 2 T sour cream

1- Cook turkey in large, non-stick skillet over medium heat until brown
2- Add 1 cup salsa, spinach and cream cheese in cubes
3- Cook until cheese melts, stirring frequently 4-Remove from skillet, set aside 5-Heat tortillas following instructions on package 6-Spoon about 1-2 tablespoons turkey mix across center of tortilla. Roll up and place seam down in baking dish (make sure to coat dish w/ cooking spray so tortillas don't stick) 7-Repeat until all tortillas are done 8-Combine remaining salsa, tomato and cumin and pour over tortillas.  Add shredded cheese.
9-Bake at 350 for 25-35 mins until cheese melts 10-Serve w/ sour cream (and shredded lettuce/optional)

Tip: Also great without the spinach...
