Hilary's Latest Recipe- Fish en Papillotes
Get your kids cooking this weekend and introduce them to something new with fish en papillotes, “pockets.”  Papillotes are great way to encourage your children to try new foods.  Let them help make their personalized “pocket” so that they can experiment with the fish and vegetables of their choice. After all, when children help with the cooking they are more likely to try foods that they would not have.

Fish en Papillote with Zucchini, Tomatoes and Yellow Peppers

Ingredients
- 4 skinless salmon or sea bass fillet, 6 to 8 ounces
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 cup fine julienne of zucchini
- 1 cup halved cherry tomatoes
- 1 cup fine julienne yellow pepper
- 4 Tbs of olive oil
- 4 Tbs Orange juice
- 1 cup dry white wine

Directions
Preheat the oven to 425
Fold a parchment paper ( 24 by 16) in half
Season both sides of the fillet with salt and pepper. Place in the Center of one half of the parchment paper
Scatter the vegetables over and around the fillet, drizzle with olive oil, orange juice and wine.
Fold and inflate the pachment
Set on a baking sheet and bake for 15 minutes or more.
(Depending on the thickness of the fillet)
