Family Fondue Fun
Make Friday Night Fun with Fondue

Fondue is a great way to get the whole family involved in dinner. Let each family member pick different foods to dip into the fondue, experiment with fruits, vegetables and even meats, but most of all enjoy!

Classic Fondue
yield: Makes 6 servings
active time: 30 min
total time: 30 min

Ingredients
garlic clove, halved crosswise
¾ cups dry white wine
1 tablespoon cornstarch
1/2 pound Emmental cheese, coarsely grated (2 cups)
1/2 pound Gruyère, coarsely grated (2 cups)

Directions
1. Rub inside of a 4-quart heavy pot with cut sides of garlic, then discard garlic.
2. Add  1 ½  cups wine to pot and bring just to a simmer over moderate heat.
3. Stir together cornstarch and  ¼ cup white wine
4. Gradually1 add cheese to pot and cook, stirring constantly in a zigzag pattern (not a circular motion) to prevent cheese from balling up, until cheese is just melted and creamy (do not let boil).
5. Stir cornstarch mixture again and stir into fondue.
6. Bring fondue to a simmer and cook, stirring, until thickened, 5 to 8 minutes.
7. Transfer to fondue pot set over a flame.

What to dip:
Cubes of French bread
Grilled Steak cut into cubes
Slices of Italian Sausage
Cubes of apple and pear
Grapes
Roasted potatoes
Julienned raw red bell pepper
Blanched broccoli florets
Blanched Asparagus spears
